Venison from a young doe, rolled in flour, cooked up in a bit of butter, medium, with some salt and pepper and mashed potatoes....

That's the only steak for me. I'm making some for dinner this afternoon if anyone cares to join. :)

Ribeye - Medium Rare - always cooked by me, restaurants are too hit-and-miss.

Ribeye tossed on hot grill, 4 min each side, sit for 5 min...perfectly rare every time. I'm hungry.

Rib Eye! Last year I had a Flat Iron steak, haven't done much research on it, one person told me it's the way it's cooked that got it its name. Another said it's a different cut of meat. I found it to be pretty tasty. Anyone with info care to drop some knowledge on this Flat Iron? thanks :)

Needs to be multiple choice, every single one of those can make my favorite cut on any given night.

But one thing is for certain, they always need to be done Medium Rare, more rare than medium :D

It's a relatively new cut taken from the top of the blade roast. It got it's name because it resembles the shape & appearance of an old flat iron.

It was a very inexpensive cut, but it's really been gaining in popularity and that cut has been shooting up in price and from what I've seen is probably going to sit somewhere in price between Eye of Round steak and NY Strip. ($3-$4/lb)

so ribeye or filet

doesnt matter as long as it still moo's

in europe u can get steak in "blue"

basically they take it out of the fridge, sear it for a couple seconds on each side and serve it to you. The insides will still be cold.

I saw that on the Keg Steakhouse menu

"Blue Rare"
Cool, blue, all the way through.

I don't think I am brave enough to try that. I fear I am going to get sick after eating those raw meat.

wont you get sick from eating raw meat?

I always avoid recipes where the person talking says-- people go nuts.

As a Chef I usually let my cooking talk for itself.

I love a nice porterhouse seared on both sides and pink almost red in the middle.
Seasoned with only salt and fresh ground pepper!!

bon appetit!!

I don't know much about steak cuts because I'm new to the game, but when I order, I usually get a Prime Rib or Ribeye. I love steak with fat. The best would have to be a steak made of bite-size chunks seperated by linings of fat.

I like it cooked in a way that it looks nicely done, but when you press it with your finger, some brown blood comes up.

Porterhouse.. cuz I like big steaks.. and rare, because thats how a steak should be cooked. The more you cook, the more flavor you lose.
