Hi All:

My neighborhood puts on a progressive dinner each year. The idea is to facilitate establishment of relationships within the neighborhood by encouraging homeowners to spend some time together. Groups of homeowners go to one home for drinks, another for soup and salad, another for dinner, and then entire group gets together for a huge dessert bash at one home. Its a lot of fun, particularly as it is very likely that several of my neighbors will be 3 sheets to the wind by the end of the evening

That said, I have been tagged to host 8 people for soup and salad this year. I have a number of good soup recipes that I could use, such as blackbean, potato leak, etc.. I routinely make them and they are very good. However, they seem a little bit mundane for this type of event, which tends to be on the hoity toity side. In past events other hosts have served lobster bisque, gazpacho, etc.

So, ye chefs o' ATOT, can you give me any recommendations for a good high end soup?

Tom Ka? I loves me some good Tom Ka Gai. Might not be "hoity toity" enough for your purposes, though.

I make an extremely easy roasted cauliflower and shallot soup (essentially four ingredients) that is very good (it's my wife's favourite). It's also vegan (doesn't have to be of course), so no dietary issues for anyone if that's a concern.

Can make it extra fancy by adding a crostini on top and a drizzle of some quality truffle oil.

minted pea soup is always a winner.

blanch frozen or fresh peas and sprigs of mint in water for just a few min.

put peas and mint in blender with enough of the water to make soupy, a few spoons of creme fresh and some olive oil, salt and pepper. (or seperate some of the water and use an imersian blender) though i find the table top makes it a bit smoother.

fry up some proshuto in olive oil to a nice crisp and break into smallish peices. serve with the proshuto and a spoon of creme fresh on top.

very fresh and light. I think it would go good with a caprise salad.

or maybe a cold melon soup?

Whenever I have fancy guests over, I serve them Spaghettio's Soup.

1. One large can of Spaghettio's
2. Add water as needed.

Presto!

Bisque doesn't have to be lobster, ya know. Crab is good too.

She Crab Soup is another great one.

+1 for potato leek soup, easy to make (rather quick also) and it's sooo tasty with bacon bits in it.

I have some in the fridge for tomorrow.

If you are decent at cooking, then Mohinga is really awesome and should go over well at a hoity-toity type of party.
