It was kind of like a few weekends ago when my fiancee and I decided to cook dinner for her parents for their anniversary. I bought 12oz grass fed organic filets (which are like $40 a pound, and taste absolutely incredible). The SO and I had ours medium rare. The soon to be inlaws had them well done, and no sooner were they on the plate did a bottle of ketchup come out.

It still bothers me to this day.

12oz is a good portion size on a filet since there is no bone or fat. There were 6 cooked for 4 people, but we ended up just having one each (since I made a chilean sea-bass over mixed greens with mango-apple dressing for an appetizer)

Once food/drink lands in my cup or on my plate, it's mine to consume as I see fit. Out of politeness to the host/cook I will at least try it their way but it's mine so back off. Besides, scotch tastes like crap anyway. The only reason to drink it is to get drunk. If orange soda helps that process, fine.

1 mango (pulled apart and diced)
1 red delicious apple (diced)
1 squeezed lemon
1 squeezed orange
2 tbs brown sugar
2 tsp Worcestershire sauce
1-2 tsp blackening spice
Vegetable oil to desired consistency

Blackening Spice:
1 tbsp. sweet paprika
2 1/2 tsp. salt
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. cayenne pepper
1.5 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. dried oregano


Directions:

Coat sea-bass liberally with blackening spice
Make a square bowl out of foil and place fish skin-side down
Coat edges and around fish with salsa

Cook on grill until fish is done (medium rare is best)

Serve over fresh greens, and add extra salsa for dressing.

Enjoy! I created that one about 2 months ago.

I may cut down on the sweetness though, I think Americans and Euros may have calibrated their palates differently. :)

The sweetness is complemented well by the spiciness of the blackening seasoning. Likewise, the Worcestershire sauce and lemon add a bit of bitterness to the mix.

All combined, the flavors mix together rather well, and neither the sweetness, spiciness, or bitterness overwhelms the other.
