So I'm grilling Tilapia for my parents tonight..

or.. you could make this squash thing I'm makin' tonight.. it sounds kind of nasty, but it's really good...

2 cups sliced yellow squash
1 cup sliced zucchini
1 onion, chopped
1/4 cup sliced green onion
1 cup water
1 teaspoon salt, divided
2 cups crushed buttery round crackers
1/2 cup melted butter
1 (10.75 ounce) can condensed cream of mushroom soup
1 (8 ounce) can sliced water chestnuts, drained
1 large carrot, shredded
1/2 cup mayonnaise
1/2 (4 ounce) jar diced pimento peppers, drained
1 teaspoon sage
1/2 teaspoon white pepper
1 cup shredded sharp Cheddar cheese


Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large saucepan combine yellow squash, zucchini, onion, green onion, water and 1/2 teaspoon salt. Cover and cook over medium heat about 6 minutes. Drain well and set aside.
3. In a medium bowl combine cracker crumbs and butter. Mix well and spread half of the mixture into the bottom of a 9x13 inch casserole dish.
4. In a large bowl combine soup, water chestnuts, carrots, mayonnaise, pimentos, sage, pepper and remaining 1/2 teaspoon salt. Fold in squash mixture and spoon over crumb crust. Sprinkle cheese on top, and then the remaining cracker crumbs.
5. Bake in preheated oven for 20 to 30 minutes, or until firm and heated through.

we're havin' rotisseried roast beef (teriyaki marinade) and sun dried tomato/basil bubble bread with. and.. I hope it's good, I never rotisseried a beef before.. but if it's yucky the squash and bread will make up for it.

oh.. and there's pea salad in the fridge, I made that the other day.. it's really easy...

you take a sack of frozen peas and put them in a colander, boil 4 cups of water and pour it over them. toss them in a bowl. chop a bunch of green onions and toss them in. toss in a package of bacon bits. little salt, little pepper. mix 1/2 c mayo and 1/2 c sour cream (or cheat.. leave out the salt and pepper, and use a cup of ranch dressing.. that's actually better but is not the "official" recipe..), put that in, stir it all up and chill it for a couple hours. you can add a couple chopped boiled eggs or a chopped up tomato, or both, if you want.


another really easy really tasty side dish is to take 3 or 4 or 5 potatoes (depending how many people and how big the potatoes) and peel them and cut them in about 1" cubes. toss them in a zip lock bag and pour in 2 or 3 or so tubs of papa john's garlic sauce that's left over from last time you ordered pizza. shake 'em up real good, pour them on a baking sheet (it needs sides or your oven will get yucky), spread them out, and bake them at 350-400 depending how much time you have, until they're done.. stir them around/turn them over once or twice while they're cooking. it can't possibly be good for you but it is mighty tasty.

I would recommend grilling small summer and zuccini squash cut lengthwise and portabello mushroom caps cut in 1"strips, lightly coated with olive oil and sprinkled with course salt. Serve with mango salsa.

I think tilapia tastes excellent, personally. What fish would you recommend?

Actually it's supposed to be good but what mztykal said is true. My friends Grandfather used to catch them and put them in a tank so the fish could "filter" themselves out.

I ended up letting my parents fix some veggies since I was late coming home from work. Grilled the tilapia myself though, brushed a mixture of melted butter, lemon juice, and lemon pepper on it, and it turned out pretty well. I'll have to put some real time into it in the future.

Wow, Tilapia? Same name in portuguese.

This fish is very abundant here in Brazil, i like to fish but i don't like to eat fish.:(

go to your local Mexican Fish Market, or Filipino store and get that mother DEEP FRIED :) Then some vinegar on the side..

Tilipia takes quite good deep fried.. (kinda like Red Snapper)..
