If only fake crab was the worst of it, although that's probably not a bad metric. Surimi is usually just pollack with lots of salt isn't it? Eating escolar sold as tuna, now that'll fuck up your day. I straight up stopped eating sushi years ago, with few exceptions. Plastics, metals, parasites...no thanks.

Yeah, just slide me those kurobuta porkchops instead, I'm good.

Insects are not food!!! Primitive Peoples in remote areas only eat them because they do not have a choice. Just why in Hell do you think SPAM is extremely popular in such areas that became Civilize?

Ridiculous ratios of protein per serving compared to beef, chicken and pork?

I've had mealworms fried and seasoned, and they weren't bad. Passed on the spider, smelled vaguely lobsterish to me, which is a no go.

That's simply not true. Off the top of my head, large grubs from dead trees are sought out as delicacies by a number of indigenous tribes. Look at traditional Mexican cuisine, the stuff that dates back to the Aztec. Mosquito egg pancakes! Don't make me Anthropology you. :D

And to answer your question: because it's cheap, calorie dense, pre-seasoned, has a long shelf life/doesn't require refrigeration, and represents a type of protein that is both prestigious and time consuming to produce for various tribes the world over. Hawaiians do it best though.

No not omakase, but I am quite familiar with sushi restaurants. My brother worked at a proper one for a while. So I know what I am looking at and tasting.

Doesn't hurt I have relatives who are fishermen.

How is this possibly racist? For some oddball reason White Christian Missionaries tend to put a stop to this meat being on the menu, despite being part of the Native Cuisine even since said Natives landed on their islands.

Although said Missionaries allowed the return of the quite tasty flesh to the Islanders Menu after Japan brought the Japanese Long Pig which are extremely destructive in order to control them.

One thing: SPAM gained popularity in the years of, and spread of US bases, particularly the pacific: Hawaii, Korea, Japan. There was an explosion of the stuff in those eras where we had more direct uh, "interactions" with the locals (war, pre-war, post-war), and with the diet of the time, US military had heavy influence over the locals.

It's like tracking the popularity of strange British sports direct to their colonial exploits. same is with the propagation of spam over global cuisine, with the presence and influence of US military bases from the 40s-70s.

and SPAM isn't insects. It's actually pretty awesome to work with if you know what you are doing.

Beg your pardon? The Military did gave a helping hand to the spread of SPAM as well as the US Government handing out Food Aid after WWII by giving away 1000's of cases of the canned meat. But SPAM was already becoming sort of popular due to lack of low cost refrigeration in rural areas. And also The Great Depression for Drifters to easily feed themselves and their families when drifting from place to place searching for work.

I couldn't agree more. As a kid it was more like a punchline than a food. Anytime I encountered it I wasn't impressed. Hanging with culinary students as well as a trip to Hawaii showed me I was wrong.

Would I take SPAM over a perfect flat iron or NY strip? Nope. But I don't sneer at it anymore.

I love Spam. That was dinner tonight in fact. Made a fried spam and cheese sandwich. I had the bacon flavor. Saw it over the weekend, and thought I'd try it. I don't think it adds much to the standard spam tbh, but it was still good.

Except they hide that crap in all sorts of rolls nowadays. If you look at a modern sushi menu half the rolls will try and sneak it in as filler.
You need to stop buying gas station sushi. 😛

I appreciate your comments. That immitation crab comes frozen in a block(of sticks). It's cheap, portable, and available. I'm really limited where I live, but luckily a few grocery stores get good sushi grade fish. I think they're plastic-wrapping that stuff for shipments inland a lot better these days. I hit up Fresh Market and they have decent Sashimi/Nigiri...Tuna and salmon....lighter colored tuna too with a little more fat...not just the cheap red stuff.

Restaurants that only do sustainable fish are a trend that needs to happen on a massive scale. Not too long ago we were harvesting tuna at 6 times the sustainable rate. Not sure what it is now. Pre-90s, catching >600lb tuna was common. >1000lb bluefin were the rare ones back then. Now a 300lb fish is a big one.
