BTW, another plus to cooking the eggs in grease is that little crunchy bits of bacon get left in there and mixed with the eggs. oh yeah...now that's good eatin' 😀
 
My Grandpa used to make the best scrambled eggs in the world and one day he taught me the secret. Nothing fancy just regular scrambled eggs BUT the best scrambled eggs you ever had. The secret is to not break the yolk until the last minute and then to not over cook them. They should still be moist but not snotty....try it!
With a half-pound of bacon, some good Kimmel bread followed by a couple cups of black Columbian....😉

Put it on buttermilk biscuits, smother it in gravy and you'll hear me grunting from a mile away.

Actually, I once had something like this at a Bob Evans restaurant. It was half of a buttermilk biscuit on the bottom (there were two of them), then chicken-fried steak on top of that, then eggs benedict on top of that. It was my cholesterol for the month, but it was damn good!! $6.50 well spent! 😉

Heres one for Cheddar Cheese (the real deal none of the American Processed floor sweepings) with Ham omelette.

Speaking of Jimmy Dean, we just did some bisciuts and Jimmy Dean sausage gravy this morning, I just feel the cholesteral level shoot up!

Really the best biscuits and gravy is made with Pennsilvania Dutch Dried beef, again you gotta' get the real deal if it says Armor its sh_t.

It's tough to have a Oregon Tillamok Cheddar cheese habit AND a taste for Pennsilvania dried Beef, hard to feed both.

Nothing like making wallpaper paste with flour and water, adding butter, cheese and meat and slapping it on a thick piece of toast. Ooooohhh.... Getting hungry thinking about it.

I just pull the yolks, drop in 4-6 jumbo eggs' worth of whites (little or no oil), maybe some green onions, and some salt and garlic. Tastes plenty good to me, and still healthy too!
 
if you guys want to try something different, try separating the egg white from the yolk. beat the whites into a fluffy foam, and take half of the yolk and mix it into the fluffy whites.

Now take some bacon, sausage, and any favorite meat, and cook in a pan until it's done. remove the meat from pan, add the egg white/yolk mixture into the hot pan with the fatty oils from the meat. place the meat on top, add some cheese, and season with salt, pepper, garlic, and parsley. slam the pan 10-15 times on the stove, and stick into a pre-heated oven at 425 degrees.

let it cook in the oven for 20 minutes, and place on top of the stove. take a spatula and carefully fold the egg over to form an omlet. place on hot plate, melt some butter in the hot pan, and pour over top of the eggs. and enjoy! 🙂

I call this my Egg Supreme, and it taste great! But Russ, you can eat with me anyday man. I might have a heart attack with your diet, but hey, at least i will die full! 😉
 
So, on the topic of bacon... am I the only person who feels that meat should NOT crunch? I like my bacon done, yet still flexible. If I want crunch, I'll buy some Pringles.
 
don't forget a few shakes of Hickory smoke salt, that stuff makes it taste like you cooked the eggs over a camp fire 🙂 yum
 
I'm with you Russ on the SOS, ugh. Chipped beef does not equal good.

Can't eat more then 4 eggs in the morning, they wreck havoc on my stomach before noon for some reason. Trust me, I could eat a dozen, I just wouldn't be so good for work.

Damn it, I read this thread yesterday, and set my alarm 10min early so I could make eggs....then was so tired due to not getting much sleep last night, I didn't make any. Settled for a bowl of wheaties energy crunch. Those are almost as good as strong coffee for that energy boost 😀

 
Man, at 23 and you ahve cholesterol problems? Maybe i should go get a checkup, i eat the greasiest food around.

As for what to do with bacon grease, i dip my bread into it. Delicious.
