Dubliner is pretty good with grapes.. its kinda sharp like a (real) cheddar mixed with saltiness of parm-reg...

taleggio cheese is a creamy italian cheese that goes very well with wine, fruit, bread and charcuteries. you can find at wegmans / whole foods. my personal favorite. if you like brie type cheese, this will turn you into a cheese snob :)

There are so many to recommend. Its' like saying recommend me a good smokey meat...

Go to a good store with a cheese shop/department that lets you sample stuff.

Start looking for key descriptors like you mentioned like smokey, not stinky, other common ones are, earthy, nutty, creamy, rich, bitter, mild, strong, soft, hard, etc.

I stopped eating cheese cold turkey in November to bring my cholesterol down (butter too, and it worked!). But I can recommend some cheese, being knowledgeable:

Cheddar (this is my strong suit): New York Cheddar, Sharp or Extra Sharp. Almost impossible to beat this for cheddar. Most suck, absolutely suck in comparison. I also very much like the multi-year aged cheddar from Costco (I believe it's made in Vermont). It's on the expensive side but it's worth it.

I also much prefer Provolone to Mozzarella on pizza and as a sandwich cheese.

I really like Jarlsberg for a Swiss type cheese.

I like blue cheese and Roquefort.

Other than that, I'm a cheese idiot. Cheese is a big field, many many players. You'll never taste them all. Cheese, out!

Naw, get New York, it's always way better, always. Of course, I gave up on Tillamook years ago. I've experimented with so many cheddars and 95% of the time regretted not getting New York Sharp or Extra Sharp.

Oh man, I love cheese.

Mostly the simple cheeses are great - there's a reason they have become well-known and well-liked and popular.
