Quick, easy, different way to cook chicken breast?

cut the chicken into pieces, cook in vegetable oil, cook. Add soy sauce and garlic salt, cook some more. Add some stir fry type vegetables, cook some more. Add water/cornstarch, cook some more. Eat.

The easiest way to cook a chicken breast is to put a pan on the stove with some oil, dredge the chicken in flour/salt/pepper/spices (i like sage, for instance) (that is, put the spices/salt/pepper in the flour) then stick the chicken in the pan and fry away. If it's bone-in, do the same thing but in the oven or de-bone it.

Well.... Don't know what qualifies as "different", but you could do a quick saute in olive oil, remove the chicken after it is browned, add a few shallots and cook them. Chop some rosemary and add some thyme. Cook for a few seconds till fragrant and then deglaze the pan with some white wine. Reduce by half, then add some chicken stock. Low sodium if ya got it. Reduce till you get a sauce, then put the chicken back to rewarm. Remove the chicken, and the pan from the heat and add a little balsamic vinegar. Serve it up

Just made this up, but sounds like it might work.

Aside from the generic flour/spice idea (any spice will work, but i always appreciate something with a little bit of a kick in it. You could try something like soaking it in buttermilk or average milk and tabasco.

If you have any vegetables to accompany it, you could really easily make a simple chicken gumbo.

Though if I wanted something quick and easy, I'd go for chicken parmesan--that is, go through the frying process mentioned earlier, dump on some chopped canned tomatoes, oregano, basil, salt, pepper, parmesan, and have at it.

Other good sauces . . . let's see, the tomato-based above . . . do you have bell peppers, carrots, celery, onions, etc?

OK, a quick and easy recipe that will work...

Take a pan and heat up some chopped onions with some olive oil. Cook 'till transparent, and add 1/2 cup of white wine. Let this sit for about a minute or two, then throw some balsamic vinegar and some pepper in, mix it in, sick the chicken breast on top, mix around, and cover. Cook it for a few minutes or until one side starts to get firm, etc. and cook normally.

Tell me how it turns out. :Q :D

EDIT: Hayabusarider did something similar. This one is easier, though and has real onions. :p :D

My quick favorites: Take glass pyrex oven dish, throw chicken in, add salsa over top. Cover with foil, bake @ 350 for 25 min or until done.

Or season with Lemon pepper & Paprika. Cook on a stone in the oven for 15-20 min on each side @ 350. Try it on a stone sometime, you'll be amazed how juicy it comes out.

I use boneless/skinless chicken breasts. And season them lightly with what spices I have on hand.

I then poach them. Yup, that's right. Poach'em. In milk no less. While that is cooking (and it cooks fast too) I get some nice egg noodles going. When the chicken is done I use the left over milk to make a nice Alfredo type sauce, using parmesan cheese. I then combine the chicken and noodles and sauce to make a great meal.
