Aside from the generic flour/spice idea (any spice will work, but i always appreciate something with a little bit of a kick in it. You could try something like soaking it in buttermilk or average milk and tabasco.
If you have any vegetables to accompany it, you could really easily make a simple chicken gumbo.
Though if I wanted something quick and easy, I'd go for chicken parmesan--that is, go through the frying process mentioned earlier, dump on some chopped canned tomatoes, oregano, basil, salt, pepper, parmesan, and have at it.
Other good sauces . . . let's see, the tomato-based above . . . do you have bell peppers, carrots, celery, onions, etc?
