We have big money in the pot. The last two players bet sh|tlessly.. now who wins?

Me: Flush with Spades in low numbers
Him: Flush with Clovers but with Ace, King and Jack in them

Do I win because Spades beat Clovers in suit
or Does he win because he has higher numbers?

Dealer does not win ties, it's high card, so flush of A-7-6-5-4 beats a flush of K--Q-9-3-2. If high card ties it goes to second card so A-Q-7-3-2 beats an A-J-9-5-4. If top 2 cards tie it goes to the third card and so on down the lie. If 2 hands are an exact tie they split the pot. Suit never matters unless you're playing dealer's choice with some idiots who install rules like "low spade in the hole wins a buck, one-eyed jacks are wild and everyone must eat 7 Fritos to raise..."

If three Aces beat three Kings then high card flush wins.

But if we were in Germany....

If we were in Germany the rules change to:

1) High card wins unless the person holding the lower hand has a greater number of tanks.
2) If high cards and tanks are equal then whoever has best Air Force wins.
3) If high cards, tanks and air force are equal the two player have the option of either splitting the pot or joining forces to invade Poland.

You gotta roshambo for it.
And I'm talking the Eric Cartman kind of roshambo, not that pansy rock-paper-scissors crap.
