question about toast

you know when you are making a toast and you say "here here"
is it "hear hear" or "here here" or something else all together?

The correct term is, "hear, hear!" It is an abbreviation for "hear, all ye good people, hear what this brilliant and eloquent speaker has to say!" source

I always thought since a person makes a statement before the toast... afterwards they say "Hear Hear" is so that people take to heart what he is saying and appreciate it.
