Question about recipes, etc

I hope someone knows what I am talking about.
When I was much younger, I was friends with an Indian (like from India) family. They were vegetarian.

The father was a doctor and the mother cooked these wonderful meals I was treated too.

They were extremely tasty and I never wanted for any meat. They were extremely spicy - bordering on hot.

I've looked up 'cooking Indian style' - and it is full of exotic herbs, spices, and plants that you JUST can't get anywhere around here.

Are there any cooking Indian for 'normal folks without access to an Indian supermarket' books?


Also - what are some really good 'spicy' recipes you know of that are healthy.

My absolute favorite food was 3 alarm texas style chili with a block of hard cheese for instance.

I love creole, southern, cajun, etc.

Is there anyway to get a nice spicy cuisine without the fat and calories. I love to cook - but unfortuantly can't get anything exotic around here. Sigh.

skywhr - see the thing in the curried chicken - I've checked every grocery store in town - none have 'curry paste' and none have fish sauce (whatever that is). . .

Now you can buy pig brains, hog maws, and chicken feet. . . sigh. I live in the very rural south. . .

How about ordering the non-perishable stuff online and having it shipped to you?

bingo...most spice were shipped across the oceans in colonial times (long shipping time & no tracking)...they did alright.

Make your own is better:
A ton of curry-powder
Paprika, Salt and Pepper
Corn-Starch (Thicken)
Coconut Milk
