You probably want to also disable subtitles as well. most mkv movies have them in there and if it triggers subtitles, pms will be force to transcode/encode the video to get the subtitles in there. so in short, check that box that has use tsmuxer when it detects supported ps3 video and disable subtitles. 720p movies are about 4~5gb and should be no issue with 802.11G. lastly, dont worry about missing around with the bandwidth/bitrate settings within pms, that only affects files that it needs to be converted. if it plays the mkv natively, the bitrate will be whatever the VBR is within that moobie.
