there is no reason that science can't be right, just that instead of the universe and all of its laws being a random occurance, God perhaps created all of it, not just this earth as the bible story goes. there may be a whole more to how natural laws came to be than what man can ever learn

im sure god is/would be smart enough to create beings that can adapt and change to the environment as needed to survive.

Yes. What poeple basicly do is say "Well, we don't know <something>, so god is obviously behind it". Once that <something> is explained, they just retreat into another unknown.
So god will exist for as long as there something unknown, regardless of how much science progresses.
