What? Cows are slaughtered and processed the same way as a pig and have the same organs and muscle groups. Historically, every part of the cow was also used.I love them both, but every part of pig is amazing, while the same can't be said for cow.
The pork is not much better compared to pork I have had in Europe or pork from "heritage" pig breeds. There is such a stigma against fat in this country especially pork fat that pigs were bred to be as lean as possible. Shoe leather pork chops are the result. In Italy, my uncle slaughtered a pig and the chops that he cut from it were fatty and well marbled. You could cook them like steaks on a grill and they were overflowing with juices. Pork chops in this country pale in comparison; they need brining and careful grilling to not overcook them lest they dry out.30+ years ago I would have said beef, but now with the horrible beef this country produces I have to go with pork.

Yessssssss. Paneer curries are wonderful, good dhals also. And the Middle East has falafel, which I could probably wean off meat with. It's just that between two jobs and all else I'm dealing with I have so little time to cook.
