I keep it in the freezer and bring it into the fridge one pound at a time. I leave an individual stick on a butter tray on the counter.

1 stick in fridge, the rest in the freezer. when the fridge stick runs low we move one freezer stick to the fridge.

best out on the counter under a cover. so you can spread it. though cold butter tastes good too.

I leave butter in a covered dish at room temp. I like it room temp and I've been doing this for 15 years. Never had a problem.

store the reserves in the fridge, but the one we are using to smear on toast is kept out on the counter.
