My experiences with this:
1. With most USB devices, you have to install the drivers first before you plug in the device. If you just plug in the device without installing the drivers first, Windows gets confused and it will never work... until you delete all the drivers and do it the right way.
2. I had the same problem with my Ipod where it wouldn't show up in Windows. The Ipod updater did see it but it thought it was 38 gigs, when it should have been 2 gigs. That turned out to be caused by Windows assigning it a drive letter which already existed, hence the conflict and the bogus drive size (the drive the iPod was conflicting with was a 40 gig drive).
I'm thinking that you should uninstall all the Apple software and then rip out all references to it in Device Manager. Mine shows up under "Disk Drives" and is called "Apple iPod USB device"

FWIW, if I add a drive letter to it, it still doesn't appear in My Computer or iTunes, but it does appear in things like Nero and ephPod, although if I try to write to it via ephPod I get "List Index Error."

When I tried to format:
"The operation did not complete because the partition or volume is not enabled. To enable the partition or volume, restart the computer."
I restarted multiple times, after assigning the IPOD a letter (the IPOD lost its drive letter after the reboot as well).
