Papa John's blames NFL protests for declining pizza sales

Let's just say, for the sake of argument, that the "NFL protests" have something to do with it because these protests are causing a decline in TV viewing of football games. If so, why blame the players who are taking a knee instead of blaming Trump for "rallying the troops" - making this a national issue, encouraging his conservative base to avoid football games. Trump was actively trying to harm the NFL when he did this. Trump didn't have to say a damn word about any of this, or any other kind of free political speech. Maybe Papa Johns should take this issue up with the POTUS.

I blame Papa John's for having "meh" pizza, and for having a douche for an owner. It's on my short little boycott list along with Hobby Lobby, Chik-fil-a, jimmy johns and a few others for bad customer service (Dell the main offender). I'm sure they are really missing my biz LOL

When did Dell jump the shark anyway? One used to be able to custom build a PC on Dell's site with dozens of choices to make. Now one is lucky to have a choice of hard drive size.

How good is your dough. I like a glutinous chew to mine but don't know how to make it.

I am fortunate because I have a wonderful cash and carry wholesaler who stocks many kinds of flour and I purchased a 50 lb bag of short patent flour made by King Arthur. I replace the all purpose with that because there's better oven spring for the edge of the pie. Bread flour can be substituted but would require 5 to 10% more water.

I also do not add the salt immediately but after the dough absorbs the water after the 15 minute rest.

I then knead in my mixer for several minutes then finish by hand. This does not need to be a smooth supple dough, but you should be able to stretch it enough to get a "windowpane" of dough so thin as to be translucent.

The rest of the directions are what I follow.

Tipo 00 flour is the best type for neapolitan pies but they require something like 900F to make properly. The mixture of flour provides a nice chew and crunch you might enjoy. You want a pizza stone heated for an hour at the highest temp your oven can deliver then slide the prepared pie onto it. At 550F this is 5 or 10 minutes depending on how thinly I've stretched the dough.

You pretty much live in the bread mecca of the US and perhaps you can find some patent flour, but again it is not a "must have"

Tonight I had home made sauce, mozzarella and caramelized onions as the topping.
