I understand that saltwater has a lower freezing point than freshwater, but if you're mixing water and ice why would that matter? Mixing ice and fresh water doesn't freeze the water, it melts the ice. The overall mixture is still above 0 celsius right?

You know... I have no idea... after years and years of working in restaurants, bartender, manager, GM... it is just one of those things that works but I dont know why. I have asked many ppl why this works.... and they all say that they dont know why it work, it just does.
