Not exaclty, later books explain that they cannot stick around forever, even as spirits, but I don't exactly care for the books. If we were going to see him we should have at least seen him at the end of Ep3 in that last secret meeting. I did watch Ep2 recently and the program I used to watch it identified the speaker of alien languages and unseen speakers. In the scene where Anakin is killing the Tuskan Raiders, we see a shot of Yoda meditating and we hear him listening to a voice saying "Anakin, NO!!!" and the program revealed that voice to be that of Qui-Gon's! Would have been helpful if Qui-Gon acted as a guardian spirit like Obi-Wan did for Luke...
At the end Obi Wan gives Luke to his Uncle and Aunt correct? I dont remember seeing Anakins brother in ep 1 or 2. Maybe I just forgot.

The other Jedi's did get taken out too easily. AFAIK no Jedi was ever hit by a laser when weilding a light saber, the one with sheer volume is understandable but, common. They cant sense those things either? Yoda seemed to do fine. Maybe because hes the big cheese or because clones are harder to sense.
Not all Jedi are extremely powerful, some can only sense the force enough to give them a slight advantage over non force users, and sometimes only in certain areas such as flying or fighting or even medical.
How much further do the books take the story in terms of timeline and plot? Are they all written by the same person? Any good?
There's stuff from really far into the past, but most of the books are about the future, venturing a couple of decades in. No they're not all by the same person and most of them aren't that good (at least not IMO). Some are worth it but everyone seems to have a different view of the force and what not, so you see characters doing things (or not doing them) that don't make sense to you and it just doesn't feel right and thus isn't fun.

WTF was that "I have the high ground" thing by ObiWan at the end? Jedi can force jump like five stories into the air, why did Anakin just do a hop and get annihilated in the air?
When do we ever see them jump that high in the movies? Games and comics/cartoons don't exactly count. Why does he even try to jump OVER ObiWan? He could have just hopped off and charged forward.
There is no reasonable explanation, the whole scene at the end of that fight was just a lazy attempt to explain how Anakin became the Vader we know. We'd been told it was from defeat by ObiWan and Anakin getting his disfiguring injuries from the volcano. But since when do you leave someone you love to die by burning alive, one of the most horrific and painful ways to die? NOW that is complete BS, you have mercy and finish him off, or at least try to save him from death - and more importantly - the darkside.
