I have a GTX295 running in SLI mode now. After the race (this weekend), I will go to radio shack and buy some resistors to make a dummy plug. It'll be tough to do a controlled test though since most of my GPU WUs have different crunch times.
I have four GTX260 running seperate on two machines (2 GTX260 per machine), once i've reached the max ppd for them I'll switch one over to sli and see how it does. one machine is at 26000ppd and still climbing and the other is at 19000ppd and still climbing... keep in mind that the one at 19000ppd was started a couple weeks after the one with 26000ppd.
both are i7 920 C0... the 26kppd is OC'd to 3.1 Ghz, while the 19kppd is not OC'd... none of the video cards are OC'd, but i keep the fans running at 80% at all times. both machines are crunchers 24/7
