Question Need help with options

I have 3500 sq foot total that covers 3 floors, What are my options to connect devices to monitors? What and how many routers would be the best options so can connect 2 tvs and be able to have video conferences other devices

2 AP's such as the NWA210AX which will easily cover each floor or you could probably mount them on the same middle floor and get coverage above / below if the wiring is easier.

How easy are aps to set up they just plug and play or is there a lot of configuration
 
AP's setup like a router w/o the routing. Assign an IP, setup the SSID's, and connect with your devices.

AP's offer more options though when it comes to the WIFI side of networking where you can on some setup 8 x SSID's per radio so, if you went with the one I mentioned you could have up to 16 SSID's split between 2.4 / 5.

Netgear is releasing a new 6E AP in the next couple of days as well for ~$350/ea but, there's a catch of $10/ea per year for the management app to control it. The NWA though doesn't have any additional fees for managing it and if you want to use an app there's one available but, I think after the first year there might be a charge for it. Managing 2 AP's though is fairly simple using a browser.

I setup mine using a POE injector instead of using the AC adapter but, either works.
