No doubt. However, that meat is VERY tough and over-cooked. All those strokes are probably a result of dull knife + tough meat, is like trying to cut a brick with a butter knife.

It's not overcooked if that is how the OP and his family like it. I think it looks awesome!
 
i knew this at one point and forgot. however

whats all this about cutting with the fewest number of strokes?
