Many people will transfer their beer out of the initial fermentation vessel after about 7 days to get the beer off the trub that collects at the bottom...that stuff can give some off flavors that you might not like.
Did you add any hops? the extract probably was 'hopped' but that will only give you the bittering aspect of hops. To get the flavor and aroma of hops you need to add some (.5-1 ounce) hops about 5 minutes before the end of your boil time. I recommend you try a some finishing hops and maybe even steep a pound of speciality grains next batch.
