meh. I'm an amature (that looks wrong to my inebriated brain for some reason :p) c/f your homebrewing, just a Coopers lager kit, 1 kg brewing sugar, then bottled with a level teaspoon sugar in each (700 or 750ml) bottle....tastes pretty good i guess, very easy drinkinfg :D

You'll forgive my not using the correct terms but here are my steps

Three fermentations:
- Primary fermentation in bucket-type fermenter
- Secondary fermentation in carboy-type fermenter
- Refermentation in bottle after adding bottling suger

Many people will transfer their beer out of the initial fermentation vessel after about 7 days to get the beer off the trub that collects at the bottom...that stuff can give some off flavors that you might not like.

Did you add any hops? the extract probably was 'hopped' but that will only give you the bittering aspect of hops. To get the flavor and aroma of hops you need to add some (.5-1 ounce) hops about 5 minutes before the end of your boil time. I recommend you try a some finishing hops and maybe even steep a pound of speciality grains next batch.

I've never done a belguim white... try searching over at BrewYourOwn....

2.75 pale malt
2.25 lb. rye malt
2.25 lb. flaked wheat (or unmalted wheat)
2.75 lb. wheat malt (or unmalted wheat)
3.15 AAU Sterling-60 min.
3.15 AAU Sterling-30 min.
.5 oz. freshly ground coriander seed-5 min.
.9 oz. bitter orabge peel-15 min.
1 Tbsp. grains of paradise-5 min.
2 Tbsp. whole wheat flour-5 min.
1 oz. dried chamomile flowers-2 min. (optional)
DCL T-58 dry yeast or WY 3944 wit yeast

Single infusion mash at 153F. Ferment at 68F





Give me a bit and let me see if I can come up with some sort of extract based version of this one.
It's pretty standard on my taps druing the summer.

its how many people start out. no worries. You will get better beer by letting it age in secondary, and some beers higher alcohol content will need a secondary to fully ferment down. For your beer, what you did is fine. I am sure the extract had completely fermented down.

If your beer has a sort of 'green apple' taste then just let it age in the bottle for another week or two.

;) Cheers yeah i've found letting it mature for a few weeks longer really helps (epecially with the dark/real ales).

Once i'm no longer a broke uni student i'd really like to try doing it properly like you say, then you can really say/feel that the beer is your own creation :)

It would be awesome to use barley from the farm in that too i guess...

Dug777 you may have better luck with priming you bottles using a syrup method. Instead of measuring out a specific amount for each bottle, take 4oz of corn sugar boil it with 1 1/2-2 cups water for about 5 min let it cool and put it in your bottling bucket as you siphon the beer into it before bottling.

It gives a much more stable carbonation for bottle to bottle. Every beer I tried from other brewers that used the dose each bottle method had uneven carb for each bottle. Besides its a real pain in the ass putting a measured amount in each bottle.
