<< The freshest sushi (at least in Japan) comes form the "kaiten" sushi bars, it's this assembly-line/conveyor style bar, you have this in CA? It's 100% fresh naturally, because of the 5 second turn-over. They put it on, and it's gone. The magic of sushi is freshness, 5 minutes on the tray and the flavor is gone. taste in Japan is also slightly different from other countries, because they use a different, Japan-only rice. >>
Yeah there are a few "conveyor belt" places in CA. There's on that's relatively well known called the Frying Fish in Little Tokyo. Then there are a few other small ones here and there.
Speaking of this 5 second rule.... I did notice a big difference between all you can eat places and nice sushi bars. Don't like to go to buffets only when I want to eat alot of stuff. Some notable/decent places for this is Todai (chain), Sumo (chain), and Onami (also chain imagine that!)
