Taken from my previous thread.

Ok, so my chili sucks; fair enough. I'm not a cook, this is for a company cook-off, and I'm the new guy so I thought I would get points just for trying. You guys are a tough crowd!

So let me hear your recipe since mine is no good. Please be as specific as possible. I'd love to take the trophy home and can use all the help I can get (obviously) :)

The current champ is a 3 years in a row winner who also happens to me my boss. He is a great guy, but I'd love to take him down.

I'd rather it not be crazy hot since this will be at work and the line to the Johnny hole will probably rap around the building.

This is the best chili I've ever eaten. Warning: No chili will go easy on the gut, but for some reason this stuff will really clear the room, and possibly the house if you add beans (as I do). You've been warned.

You only gave ingredients, not the recipe. Proportions and sequence matter. With a couple of more ingredients, it could be good. It's not going to be good after one attempt (forget about winning anything now). After some experimentation, it could be great. That is, if you're really trying to make good chili. If you're just trying to impress, then buy somebody else's.

If it's for a cook off, I'd buy some higher quality beef and have the butcher ground it up for you instead of going with regular prepackaged "hamburger" meat. That way you'll be sure you're getting choice cuts. It will be more expensive, of course, but I think the results will be well worth it.

Nope, WV. But I have to say that good ole' Texas Pete is one of the best tasting hot sauces out there, it isnt hot but its damn tasty.

Since you're not a cook, I have a 'secret ingredient' for you, try Hereford cubed beef in a can in place of ground beef. Use the whole can juice and all. It comes in #10 and #5 cans.

Sorry, it's just that I love chili so much yet I hate beans even more. It really bugs me to have one of my favorite foods ruined by one of my most hated. Fucking Beaners (not a racial slur.. more of a culinary slur)

Not to be inflammatory, but I think people who use beef or chicken broth in recipes are pussies (at the very least, lazy).

2 white onions
1 yellow onion
minced garlic
fresh diced jalapenos
fresh diced cheyenne peppers
(optional) habeneros
(beans optional) I use black beans
cumin
ground mustard
celery salt
a little chili powder
brown sugar
1 can of beer (I prefer a dark beer)
simmer and stir for several hours

One of my favorite possessions is my 1992 City Chili Cookoff award ;)

My recipe ain't for sale, but I do use black coffee, masa, and a couple of other things you wouldn't think of.

minus the beans and you got yourself a pretty good chili right there (I don't put turkey in mine, but do use a nice top sirloin I cut into cubes myself and pork I cube myself).

Beer is great to put in chili, so is red wine (saute the onions up first in the red wine).

One thing my wife does that taste pretty damn good is to take a small chuck of stew beef, cut it up in bite sized chunks and cook it in with the beans and ground beef. Very good addition to regular chili for me.

What's with all of these "best recipes" using packaged ingredients. Canned broth, bullion, etc... really?

Look, I'm no stranger to using commercial bases in my recipes. But those are a shortcut for when I don't have time to make the stocks, demi glace, whatever. If I'm making something I call "the best" I am not using processed, canned ingredients. Those are, in and of themselves, not the best.

I'm not a professional chef, or even a snob, but there's something about something being inherently NOT the best if you're dumping cans of broth into the pot. At least use a high quality commercial base, one with more meat than salt.

Heheh...got that right :)

Anytime someone wants advice/recipe/instructions on any subject, everyone goes out an searches Google, posts a response, and makes it look like they're an expert in the subject.
