I don't know how the watermelon thing started, but the fried chicken part (IIRC) came from the fact that slaves would fry it so it would stay edible longer without spoiling.

Cheap food in the south, slave owners didn't want to spend much money on their slaves and after they were freed they continued to eat cheap foods since they were still poor. So they ate foods that were easy to grow or keep for long periods of time as you mentioned or parts of animals most people threw away.
considering how poor the south was in general i'm going to guess most people in the south ate those foods. besides, okra, greens and fried chicken are good eats.

People in agarian communities have always tried hard not to waste any parts of their animals or crops.
My maternal grandfather grew up on a farm in PA, they butchered the meat themselves and used the less marketable parts in their food- scarpple and punhoss (sp?) are two examples.
Likewise in France, it is very much frowned upon to waste any part of an animal.
It is also just flat out stupid for business purposes. If you watch shows such as "Last Restaurant Standing" you'd have seen one of the world's richest restrauranters speak to the contestants about the importance of waste. These less-than-popular portions of the animal will account for 30% of your profits.
It's also considered disrespectable to the slain animal to waste parts of it.
