Made another 40 dollar pot of chili

I've long given up on DIY chili, I have never been pleased with anything I've done other than opening up a can of Hormel No Beans. That always pleases me.
Wow. Wow.

If Hormel is your standard, you have extremely low standards. It is a good thing that you have given up on DIY chili, if you cannot do any better.

When I was teen, my mom was buying me Chef Boyardee O's and other canned varieties to eat for a quick meal. Then one day I discovered spaghetti, ravioli and sauce in a jar. I wasn't making pasta in a machine or sauce from scratch, but I raised my standards by cooking sauce and pasta, not from a can. Mom didn't care, because now she didn't have to bother opening up a can, heating the CB on the stove amd cleaning up after me. It was a win-win for both of us.
 
The bean stew you're calling chili would be like making a stuffed tomato and calling it a steak.




Of course it's serious eats, it's got marmite and anchovies in it
I have only been there a time or 2, but this still made me laugh.

I am also not a purist about food. And have no problem calling that recipe chili. I do one with flank steak and baby bella mushrooms that I call chili. No beans in that one. I think of standard no bean chili as chili sauce, and I want it on something like a hot dog or burger or nachos or something. With beans is for eating as a meal imo. But I am not telling anyone else what to do or think on the matter.

Anchovies can be a great "secret" add in I have found. Make a Francese sauce and whisk in a couple of anchovies = yum yum.
 
Add beans to chili? Hell, the one recipe above was more like adding a tiny bit of meat to bean casserole.

I personally find chili made with ground venison to have better flavor than beef ever gave chili. Once or twice, I've made it for pot luck luncheons at work. And, I keep my mouth shut about the ingredients. Many have raved at how awesome it was... before they knew it was venison.

Venison makes the absolute best chili. I still have about 12 oz ground and some reserved tenderloin pieces from a previous cook (left over from trimming a full rack).

That is all waiting for the next chili.
 
2x 29oz cans Tomato Sauce
2x 28oz cans peeled/diced tomatos
2x cups diced onions
1tbs italian seasoning
1lb bacon (not maple/anything weird.. just hickory or w/e)
2lb spicy sausage (breakfast style, in the tube)
3lb lean ground beef
1x 16oz bottle BBQ sauce. Highly recommend Rufus Teague brown sugar & hickory or whiskey maple.
1/2 cup chili powder
3x 15oz(ish) cans kidney beans. Dark ones if they have them.
2oz unsweetened baking chocolate (not dark.. unsweetened).

Throw tomato stuff/onion/seasoning in big pot, throw on medium.
Slice brick-o-bacon into strips, skillet cook until crispy, throw in.
Skillet cook tubes-o-sausage, don't break them up too much (important!), throw in.
Skillet cook beef, throw in.
Chop up chocolate into relatively small chunks, throw in.
Throw in everything else, simmer for x. Don't cover (gotta cook off some of the moisture).

Don't adjust recipe too much, you can add in a little whiskey/bourbon, or adjust by 1 can of beans based on preference. Can throw some cheddar on a bowlful at the end if you want, but you won't likely taste it.

ADD tomato sauce, water, spice packet and salt to taste. To Fix it Mild, omit cayenne pepper packet. To Fix it Hot, stir in cayenne pepper packet to desired taste.

$10, done.

Yup, hardly any spices. I like my chili spicy with flavor. None found here.
 
I love Venison chili myself, haven't had any in a long time.

I need to pick up more anchovies, have been out for little while.

The wife doesn't like them, but we make separate versions of a similar recipe at once sometimes.

i'm not going to go so far as to claim that beans cannot be in chili. they were almost certainly used by the poors to make it go further. but all you idiots need to stop using creole kidney beans and start using tex mex pinto beans if you're going to add them.

and stop adding so many dang tomatoes. this isn't red gravy.

here's my recipe.

3 bell peppers
2 diced onions
4 big cans of kidney beans
4 cans of baked beans in tomato sauce
2 big cans of stewed tomatoes with italian seasoning
2 packets of old el paso chili powder---with additional regular chili powder
my friends secret hot sauce he makes
3 pounds of lean ground beef
lots of crushed peppercorn

I guess its my scottish version of the texas chili.

That sounds like it would be roughly $40.00 in Canada - might even be more in shithole Toronto. Remember, that's like 49 cents in the USA.

some times i luck out and they have deals on hamburger..but its usually the beef/pork mixed together that they scraped off the fucking floor in the back. no such luck most of the times.
