Since you like Nightwish and Edguy look into some power metal.

I'd try out: (some of these have been mentioned)

Sonata Arctica
Kamelot
Blind Guardian
Stratovarius
Crom
Demons and Wizards (side project by one of the guys in Iced Earth)
Grand Magus
Hammerfall

Oddly enough, I just stumbled across something that struck me funny. Back in the day, a friend got me into Iced Earth and I couldn't get enough of them. Naturally I branched out to Demons and Wizards and Blind Guardian from there. One of the songs someone recommended was a "Demon and Wizards" song called Excalibur. As it turns out, it was mislabeled as being written / performed by Iced Earth, Blind Guardian, and / or Demons and Wizards. It's by a band called Grave Digger. Not a bad song, but the chorus kills it for me - http://www.youtube.com/watch?v=GlicNcNeQ8o.

I actually heard Lacuna Coil before Nightwish. They're pretty good, but I haven't kept up with them.

I guess I'm one of the few that likes Nightwish both with Tarja and Anette. My favorites are Nemo, Wish I Had an Angel, The Poet and the Pendulum, Amaranth, and Sahara. The Poet and the Pendulum is actually one of my favorite songs of all time now. If you have any suggestions of older Nightwish songs to listen to, I'm all ears - I've listened to a few but didn't care for them (Sleeping Sun and Wishmaster).

Sounds like you've heard quite a few of their albums, if you haven't heard these then you might like them:

Creek Mary's Blood (it's a slow song, but I love the feel to it)
Bless the Child
Slaying the Dreamer
Pharaoh Sails to Orion
Tenth Man Down

Since you don't like all screaming bands, I'd recommend:

Protest the Hero (Prog Metal/Mathcore - amazing guitar/bass talent, also have a new album coming out in 2011):

This is from their previous album, you should check out "The Battle" and "The Revenge" They are both amazingly awesome albums.

I'm pretty sure these guys are my favorite singers ever, but Jorn lande edges out Russel Allen easily. But nevertheless these guys are probably some of the best singers in metal.

Also, Jorn alone is pretty amazing too

Watched the video - a bit too slow / mellow for my tastes, but a very skilled band nonetheless. I'll check out some more by them. 🙂 Phish isn't really up my alley from what I've heard.

I've never listened to Buckethead actually.

Better live recordings of Buckethead are far superior to his studio stuff. I'd get a bunch of shows and find one with good audio quality and give it a go.

Phish ... ya you have to like them. But they are probably one of the most talented groups i know of. Probably on my Bucketlist along with seeing Les Claypools New Years show where formal dress required. Whimsicle formal dress thoguh.
