Thanks for the great article! This reminds me of the Ham on the Street show when George Duran had peole try several types of chocolate and most went for the 100% and didnt realize how unsweet it was!

I saw this chocolate all over Italy, when I was there a month ago, but need to look for it here!

I've seen them at supermarkets and other places around here. The 99% is gross. It's really bitter, like sucking on a coffee bean. On the package, Lindt suggests you slowly work your way up to the 99%.

Thanks for pointing out the 99% bar. I think I'm going to have to really search for that one locally. Trader Joe's carries some premium chocolates, I'll see what they have.

That is like taking Cocoa baking powder and adding a gram of sugar to it and then pressing it together and baking it. How is that indulgent?

99% cocoa does not mean 99% cocoa powder. Cocoa content includes both cocoa powder and cocoa butter, which mellows the flavour and gives it texture. I haven't tried their 99% chocolate, but like I mentioned earlier, their 85 % is really good for something you can pickup at a supermarket. This 99%, I think would be hard pressed though to beat my favourite chocolate Michel Cluizel Noir Infini
