Let's say you lose all your kitchen equipment, how do you restock it?

Basically, what did you buy and wish you had bought instead for your kitchen?

Just curious. I know there's some fancy storage saving shit out there that I had made me think, "Fuck, why didn't I buy that instead? Wish I saw that earlier!"
 
Fancy storage shit? I guess buying $2 ziplock plastic containers instead of $1 generic store brand would be fancy...
 
Ever heard of Target? Go there and mingle with the Ugg girls drinking Starbucks.

I keep a list of my kitchen inventory online, so assuming I had the cash, I'd just replace it all via Amazon. I'm a major kitchen gadget fanatic & have a ton of appliances & cookware that I've accumulated over the last ten years so it'd be a pain. I have a pretty specific workflow & have my favorites as far as tools go, so I'd just go right back to what I had before.
 
A good quality carving knife, enamel cookware, and a gas stove. I really hate our ceramic cook top because it's so hard to control the temperature. They take a while to cool down so sometimes it's just better to take the pan right off the burner. With gas you get instant control.

My pots/pans are mostly older Revere Ware. Not world class. My main skillet isn't even especially flat on the bottom. But I'm very familiar with it and have learned to work with it.
If I were to start over, I'd go with commercial tools; basic working tools, quality but not necessarily high end brands. As nice as they must be, I wouldn't buy a $500-$1000 John Boos butcher block table. I'd just get one big wooden board, and a few plastic ones that would fit in the dish washer, maybe $100 total.
No knife block. Magnet strip(s) on the wall.
Half dozen 1/4 sheet pans and two 1/2 sheet pans.
Pancake batter dispenser.
Is there a prosumer grill? Never liked consumer models with their coatings and uneven heat. But a full commercial grill is overkill.
 
All I know is I want a gas range, and I'll probably have to go with GE appliances because they have the slate finish. It's a matte finish that's darker than stainless and doesn't show fingerprints as easily. I like it, and frankly don't think any one brand makes better shit than the rest of them so I'll pick the one that looks good.

Freezer on top... why?

I have that now and want a drawer freezer with french fridge doors.
 
I needed some stuff for a high school fundraiser once, and went to a restaurant supply store. Since then, it's rare that I go to a normal retail outlet for kitchen related equipment - I go to the restaurant supply place. Far better quality for a fraction of the price. Granted, the cookware doesn't have some celebrity's face on a box, but the stuff is a lot heavier duty, more durable.
 
I'd probably look at some T-Fal or something, then remind myself that the hole in my heart can't be filled with kitchenware, and having nice pans won't give me a sense of self worth.
 
I would buy the same cast iron skillet, bunnomatic coffee brewer, and the same grinder. Ohh, also I would have gotten the metal french press instead of glass so that when my woman knocks it off the shelf and it falls to the floor, it doesnt shatter into a million pieces.

I'd probably have gone with dishes that are not stonewear since they are not good to microwave, and the woman thinks they are too heavy.

Mostly the woman would decide since she is much more fussy about a lot of the kitchen stuff than I am.
 
1. ceramic knives are nowhere near as good as they make them out to be; instead, get a good knife and a sharpening stone.
2. a non-stick pan with glass lid cooks well 90% of foods
3. iron pan for steaks and the 10%
4. spend that money one a REAL japanese rice cooker.
5. for me, both food processor and stick blender.
6 more than 1 chopping board and many, many kitchen cloths.

the more i go on, the more i realize i can't make a list out of this.

i have stock pots, clamps, cleavers, mallets, various graters, cooling racks, etc .. all essential. not to mention the redonkolous number of spices and weird ingredients; katsuo-boshi, anyone?
 
Wait til the thrift shop gets it in. Good cast iron and knives don't show up there, so I guess I'd also have to go to the flea market and antique shop.
