I've recently found a decently healthy combination

cold soba noodles + tofu + veggies

a touch high on sodium, but the soba noodles and veggies offer fiber and carbs, tofu offers protein. very little fat, medium calories.

Try ponzu sauce. It's a low sodium citrus/soy sauce combo and it does wonders with noodle bowls. You can also make quick shot stir frys that taste great as well, and the chicken can always be added to that.

The one thing I swear by now that I am eating cleaner and trying to really change the body around are those "Zip and Steam" bags you see everywhere. Those things will cook chicken, fish, and veggies perfect (steamed perfect that is, juicy and moist mainly) and I can drop them into anything with little to no prep at all. It's been a godsend with the time I spend at the gym and school now. Wife loves them as well, so that helps.

I hear ya. Boneless and skinless chicken breast is an abomination. By the time you make it taste good with marinades and other flavour enhancers you may as well be eating cardboard, because it doesn't taste like chicken.

I don't really pay attention to fat content in foods very much, especially in meats, but how does Extra Lean Ground Beef or just well trimmed steak stack up? I always buy the Extra Lean Ground Beef and from shrinkage and the amount of fat my GF Grill lets out it seems very low Fat wise.

Noted on the ponzu, never thought to try ponzu with soba noodles. We have the zip and steam bags, but I find the results unpredictable compared to using my steamer.

Any type of seafood. Even if it has fat, it's likely to be healthy fat. Fish is the best (in terms of health), but almost any other seafood (crustaceans, octopus, sea urchins, etc) is healthy in general.

The only to watch out for is mercury. Stick to wild-caught fish if you can afford it, as they typically have lower levels of the stuff. In any case, unless you're a pregnant woman, you probably won't experience any negative effects unless you ingest the stuff en masse.

Also, frying anything (depending on how it's done) negates most of the nutritional value.

boneless skinnless chicken breasts are awesome.

Grill em till they are mostly done, cut em up, make some chicken and shrimp gumbo ..... Add tons of veggies to it.
It may not be the healthiest thing in the world, but it's still not bad for you, and awesome flavored.

Cut up and then stir fry the chicken in some olive oil. Once the chicken is browned, add some of your favorite veggies. Awesome dish, easy to prepare, not too high in fat. It's got lots of carbs (thanks to the sugar) but not too much fat, but if you have some more time and effort you can make really awesome stuff like like Kung Pao chicken ... mmmmm

Another of my favorites to make with chicken breasts is curry.
I usually add some strange combination of the below: tomato paste, onion, garlic, soy sauce, fish sauce, paprika, chilli powder, coriander seeds, chilli peppers (thai dragon peppers are AWESOME .. mmm), tumeric, cumin, cinnamon, nutmeg, cloves, coconut milk, and potatoes

boneless skinless chicken breasts cooked "plain" suck ass.
However, it's awesome added to many, many, great dishes.



As far as alternatives to chicken, How about a nice low fat pork tenderloin? It isn't the lowest fat food in the world, but it's a LOT lower in fat than beef. Cook it on a rotisserie ... mmmmm


That said, nothing beats a good rib-eye or porterhouse cooked medium rare to perfection and then topped with mushrooms and served next to grilled asparagus. Mmmmmmm I LOVE STEAK. Steak is delicious.

Being on a diet and eating less red meat sucks. Also, being broke sucks.

An alternative is to follow the same coating procedure, but then bake them in the oven at 375-400 for ~12 minutes instead of frying. Really good when added to something with a sauce (I love dipping them in apple sauce).

Right. It's not deep fried, it's pan fried chicken. Suggesting fried chicken as an alternative for a lean meat source because the OP thinks chicken breasts taste like ass is rather pointless. At the end of the day, it's just the original chicken breast (which he doesn't like) and a fried outer coating. Not saying it's the worst thing in the world.

I always like smoked turkey breast cold cuts that make sandwiches with whole wheat bread. It gets bland after awhile but its a good way to get some protein with little fat and calories

I like sandwiches too, and I make some bombass sandwiches. But they're not good to bring to work IMHO. No toaster here, and a sandwhich without a light toasting aint that good IMHO

Good Eats Tuna Steak
While I haven't personally tried this recipe, I saw it on the food network and it looks really good. Basically a wasabi and soy sauce marinated tuna loin grilled. I'm going to try the recipe when the weather warms up a bit.
