Try ponzu sauce. It's a low sodium citrus/soy sauce combo and it does wonders with noodle bowls. You can also make quick shot stir frys that taste great as well, and the chicken can always be added to that.
The one thing I swear by now that I am eating cleaner and trying to really change the body around are those "Zip and Steam" bags you see everywhere. Those things will cook chicken, fish, and veggies perfect (steamed perfect that is, juicy and moist mainly) and I can drop them into anything with little to no prep at all. It's been a godsend with the time I spend at the gym and school now. Wife loves them as well, so that helps.

if you use healthy bread crumbs and a relatively small amount of (quality) olive oil, it's actually quite healthy and delicious. to put it another way, this is not the kind of deep fried crap you get at KFC...

That's just an easy example, but grilling is my favorite way. You can also bake or broil inside a foil wrap.
