Just had a steak-umm, am I going to die?

Yep, beef steak, beef connective tissue, beef guts... unless they tell you "100% (cut name)" it doesn't mean anything. Another fun trick of their trade is to raise the animals here, ship them to China for processing, then ship them back and sell them as "US farm raised!" It's all about being technically correct.
I work in the meat dept. of a local food distributor, there are no Chinese products we carry, none. In order for this to happen you would have to raise the animal to maturity here in the US then freeze it, ship it 7,000 miles, further process it, then send it back for distribution. That is simply not economically viable to realize a profit and given China's spotty at best track record if consumers found out about it your sales would tank in short order.

Steak tartare prepared with a mustard ice cream, just had this last night, it was out of this world good, way better than steak'umms

Alright fine, it turns out that although it got regulatory approval, that never actually happened. I stand by my other comments and general snotty attitude though.

I'm gonna go out on a limb here and guess you paid more than $3.99 for that meal so comparing it to steak'umms is akin to comparing a Ferrari to a Yugo, the only thing they have in common is 4 wheels and they both roll on their own power. Have to admit I do like and will eat raw meat. I snack on tenderloin tips almost every day, (always when the boss is gone of course!).

Steak tartare you should buy from a trusted butcher, there used to be a German butcher near where I worked a few years ago, he kept one grinder dedicated to that only that was cleaned on a daily basis.

He was ran out business from WalMarts etc, but he had some pretty killer steaks etc att.

While China is far fetched, fish is generally processed in Mexico.
