We all buy pointless stuff even when we can get away with cheaper alternatives. I'm sure I could easily live with half of the camera gear, speakers, books, computers, cigars that I have. But I rather not. I like what I have. Fucking idiots on this forum think everyone should live life they way they are. Fuck that.
 
Yes... the factory edge is not very good. I'm going to put on a better convex edge this weekend and see how it does on the board.
 
I have this exact same knife. It is my only nice knife and has seen light use since 2008. I hope you enjoy yours as I do mine - it is a scalpel among butterknives in my kitchen and as such is kept fairly hidden on a bookshelf so no one else here may abuse it.

I read the story behind the KF Hattori knives and am pretty impressed with the whole project.

I would like to get a nice paring knife from JCK but have yet to make room in my budget for one.
Just get yourself a Fibrox paring knife. That way you don't have to be scared about screwing it up.

I'm not quite sure I understand your thrust. I paid more than cost to the person who bought me the items I wanted, as soon as the details of the order were confirmed. Ask CZroe if this isn't true.

Are you just bitter that people can do what they want with their money?

Surprised at what? That sharpening a knife can lead to wildy varying results, completely controllable by the process by which the sharpening is done?

Logitech MX518. One of ligitech's starter gaming mice. I don't care for how long that mouse is. I refer their MX Revolution inspired designs. Right now I'm using the G700.
The MX518 is one of the best in terms of maximum speed and acceleration.

Having been on the internet since at least 2000, based on your join date, I'm surprised by your reaction. Surely in that time you've learned that any choice you make public on the internet will find SOMEONE who disagrees with you on it. Maybe it's just trolling, maybe not.

Yeah I'm sure it is. Very popular mouse. It along with the M500 and G500 seem to be their best selling brands. Personally I'm not a FPS player though so that aspect means much less to me. I fell in love with their original MX Revolution and ever since had to have a mouse with that type of ergonomics.
 
I can certainly now vouch for the toughness of the VG10 in this knife. I accidentally banged the edge against the lip of my stainless steel sink. The edge is now rolled over at one spot but a few passes on the belts and it should be fixed.

Ordered a Kanetsugu Saiun SD-01. Hope the handle fits my hand well or it's going back. I have a Fibrox parer but the handle is just too small and uncomfortable. Wusthof or Henckel usually have great handles but I have a penchant for harder steel.

I'd be interested in your experiences using it after a couple of months.
I am happy with the knife even considering what I paid for it. Edge retention is very good and I did not have much trouble on the belts to keep the edge in shape - in fact, after fixing the factory edge, I only had to touch it up once. That was after I had banged the edge on my sink. The handle is perfect as long as you use a traditional grip (pinching up close is uncomfortable after a while). The knife is not a laser-type, in which case it would be super-thin and ground for slicing only, but I am OK with that - cuts more than well enough for my needs.

Still, I suppose with my background it was inevitable that I am left wanting. Because I used a Chinese cleaver growing up, I was accustomed to having a built-in board scraper. This feature speeds up prep work significantly and I do not like having to reach for a separate device, especially since my cutting board is not as large as I would like.

I have my eye on a Suien VC cleaver next since the Tojiro F-920 I want has been out of stock everywhere for weeks.

I don't have experience with this maker, but for the most part this low-volume knifes usually are not so much better than high-volume around the same price point and at times even inferior.

To me $100+ for a nice knife I'd use daily (I am going to get back in to cooking now as I am recently single and have been banned from the kitchen for the last 11 years) is not much. The more expensive knives tend to hold their edge much longer, be able to take a sharper edge as well that is usable.

Almost any knife can be sharpened to the same 'sharpness'...however; cheaper knifes tend to lost that level almost instantly and dull much faster.

That said, most don't maintain their knives which is why serrated / Ginzu / etc blades seem so much better to the layman.
