Impressive, but extra. YouTube Premium is awesome.

I tried it for a couple months .... didn't seem worth it since 99% of my YT viewing is on a PC where it doesn't serve much purpose if you have an effective ad-blocker installed.

YT music OTOH I actually do find useful.

YouTube Music is included with Premium, as is movies and exclusive content. Music is great because it integrated directly with Sonos, and the sound quality on Bluetooth headphones is fantastic. I got he family plan for like $18 and it's paid for with my Google Opinions credits every month. So, 5 family members get all of those services.

All those mentioned are insipid tasteless crap. Egremont Russets, Cox's Pippens or (if those are out-of-season) Granny Smiths are the only apples worthy of the name.

2 of those sounds like some kind of UK variety that had to be mutated beyond recognition to grow in the very same miserable climate where such people that very much enjoy bland fried fish and boiled meats prefer to live.

Fruit and vegetables are one of the few things that this country/climate does well. Apples especially. Unfortunately the traditional tart and strongly-flavoured varieties seem to be being pushed out by the high-sugar-content, over-sweet, and, indeed, profoundly _bland_, types like Pink Lady, Gala, etc, that the large supermarkets prefer (probably because they keep a long time, perhaps because all that sugar acts as a preservative? Plus they cosmetically have a more regular appearance and seem to be easier to mass produce). Plus, possibly, consumers who have been increasingly-trained to favour blandness and sweetness in all things, now prefer fruit that doesn't really taste of anything.

I reckon it all started when they started pushing the misnamed "golden delicious" on us (cheaply mass produced in France, and neither 'Golden' nor 'delicious')

There's a guy who has spent a lot of his life tracking down apple cultivars before they go extinct or lose their genetic uniqueness, I forget his name but he is definitely an authority on the fruit.

Been a number of years since I listened to his interview, but pretty sure he said the tastiest apple he's ever come across was one called Sheep's Nose, also went by Black Flower apple I think. Northern PA I want to say? They have an odd shape to them (very top heavy) but he said they are more fragrant than other apples but with less flesh. Baking them in the oven is apparently a transcendental experience for an apple fan.

I saw some Cosmic Crisp and grabbed a bag. Flavor was good, very loud and crunchy to eat, but it just seemed like a Gala with a slightly thicker skin to me. Not sure if they're worth 3.99/lb when I see Gala and others at 1.79/lb, but I'm going to keep trying ones I've never had before.

You mean that pastry in which you add a shitload of sugar because tart apples by themselves blow? No clearly not.


IMO there should be some tapioca and blueberries involved. Brown butter where applicable for sure.

A pre saute in butter before they go in the pie helps utilize the sugar in the apples better, and you use tart apples in pie for a reason dude. A little sugar is needed though, sure, we're baking dessert after all. I'm more of a maple syrup fan myself, though it is harder to use in this example.

I like Honeycrisps a lot but I also really enjoy McIntosh when I can find them.

If I need a "plan c" I'll look for Fuji or Macoun.... I don't care for Gala or Red Delicious all that much.

Granny smith has a good flavor, but I quit buying them years ago. I clearly don't know how to select good ones, and they were always hard as rocks, with a lot of waste near the core.
