All apples need to be stored cold, but the firmer varieties last longer than the softer ones generally. I know in Maine, during 18th thru to early 20th century, people were packing oak barrels with ripe apples, then anchoring the barrels to the bottom of white water rivers. Boom, fresh cold apples for the summer.
I like making a single gigantic apple and cinnamon deepdish pancake in a cast iron pan, where you finish it in the oven. People swear you have pie in the works. Sometimes I put chopped dates in it.
