Is this food I make healthy or unhealthy?

It's my main dish, I cook it several times a week. If I'm not eating left overs of this, I'm making salami, pepperoni and roast beef sandwiches..


Thin sliced Chicken breasts seasoned and broiled.
4 Bell peppers diced and sauteed in olive oil with seasoning salt and lemon pepper.
all served over rice.

I'm no nutritionist or anything, but I really wanted to get away from eating processed foods so I went and learned to make something that I would like all on my own.

Could I eat this forever and not be fat?
 
If the rice is brown then that's a good meal. I wouldn't build my life around that though, you need a wide variety of fruits and veggies to get all your vitamins and minerals. You also need a source of healthy lipids. The olive oil is a start but it's not complete. Think nuts, milk, cheese, yogurt, cottage cheese, etc...
 
hmmm okay, I tend to snack on apples, oranges or grapes. Occasionally chips and salsa makes it into my house as well.. Maybe a bowl of sugary cereal here and there.. I don't drink soda.

I cant stand nuts though and cottage cheese looks gross.
 
I used to hate cottage cheese before I actually got the nerve up to try it. Now it's a staple of my diet along with natural peanut butter. It's tasty stuff.
 
That's fine...I agree that I'd go with brown rice over white (and really, try cooking quinoa instead of rice...this coming from a Chinese guy), and I'd look to add some new carbs if you choose to try quinoa. The peppers have all the vitamin C you need, so that's good, but you do need some more fat. My typical breakfast is cottage cheese and low fat yogurt mixed together - if I'm still hungry, maybe a bowl of Kashi GoLean Crunch.
 
The chicken meal is a good start, but as Megatomic points out, you need variety.

Eat other types of vegetables, both green (broccoli, spinach, zucchini, etc.) and orange (carrots, squash, etc.).

Eat different types of carbs - multigrain bread and bagels, multigrain pasta, etc.

Go easy on the salami and pepperoni; try lean chicken or turkey breast more often for sandwiches.

Cut out the sugary cereal and get healthier, less sugary cereal, such as Kashi or Nature's Path.

If your concern is weight loss, I'm going to beat someone else to the punch and say you need to read the Fat Loss sticky in this subforum, and also make a thread about the type of exercise you currently do, and what your goals are.

Good nutrition is a good start, but you need to complement it with exercise.
 
Weight loss isn't my concern so much as avoiding weight [/i]gain[/i]

I'm 6'1, 180lbs now and I don't really think I need to lose weight, at least not a lot of weight. I just want a good holding pattern and to not suddenly have diabetes or some other poor diet induced condition when I get older. I don't want my arteries caked in bacon fat either.

Hehe, the pepperoni tastes so good, but the grease bothers me.. It feels wrong, but it's just so tasty.. I'll make less of those too.

I love Kashi Go Lean Crunch, but it gives me such bad gas that I had to quit eating it. Regular Kashi Go Lean is higher in protein, lower in calories, and gives me less gas. I make it taste good by using Light Vanilla Silk and sprinkling cinnamon over the top.
