He's a celebrity chef which is good or bad depending on your view of it. Living in NYC, I don't think anyone thinks of Flay as a top end chef and certainly not even remotely in the same tier as say Daniel Humm, Thomas Keller, Eric Ripert, or other cooking royalty. In fairness to him, he doesn't choose to compete at that price point.
What you get is a fun, trendy environment with competent, tasty, and in-your-face flavors food. You don't go to Gato or his other joints (are they still even open?) for subtlety in any form.
