What does racing have to do with anything? Have any of you actually done a sustained climb on a bike? There is absolutely no way you are keeping constant RPM.

In the first part, they are obviously not going at race pace and yet you still see a combination of sitting and standing used.

Why do you assume that constant RPM is the proper way to pace a climb? It isn't. By switching between sitting and standing, you also switch between slightly different muscle groups and cardiovascular requirements and gives a slight reprise for one "group" while still progressing on the climb.

Also, it is commonly accepted that climbing rpm will be slower than flat ground rpm. I tend to run ~10% less RPM on hills than flats (unless I run out of gears).

How does that relate to engines? It doesn't.
 
Why are we arguing about biking methods? The simple analogy is this, you can't always maintain high gear on a bike, you can't always do that in a car. Both will 'bog' if you attempt to exceed this. Bikers case, they come to a stop. Engines case, it stalls comes to a stop. /analogy, stop trying to make it more than it is.
