The audience for music is very different now than it was 500 years ago... Music 500 years ago was written for musicians to perform, and more importantly for a very small group of extremely educated people. As such each song was written as a piece of art. Whereas now music is a business where the objective is to produce the least for the most profit. You want something the masses will sing to, and purchase. This makes very little time for producing pieces of art. There are exceptions to this rule of course... Jazz in particular which will still be around and listened to 500 years from now.
