Yes, folks, it's true. I'm an evil butcherer of beings...

At least, as far as 3 of my 46 freshly murdered chickens are concerned. I hacked them apart with my cleaver, and had to change my shirt afterwards because of the abundance of sprayed blood...I didn't actually kill them, that was done yesterday - I just hacked 3 apart today for dinner.

I'll be grilling them shortly...1 is in Famous Dave's BBQ sauce, 1 in Jack Daniel's grilling sauce, and another in oil/italian dressing. They'll marinate for a short while before I slap them on my charcol grill.

Since I DO have 43 dead chicken bodies ready to be butchered and consumed, stuck in my freezer, anyone have some good recipes for grilling chicken? Grilling is best for now because it is hot and muggy here, and I don't want to deal with stove-top cooking(though I'm perfectly capable, I just want to do some grillin'! :D)

Well, some friends of ours killed and defeathered about 200 free range, corn-fed chickens. They gave us a good price so we bought...uh...some. :D

Besides...these have to alst for 6 months till their next 'harvest'! BAHAHAHAHAHAHAHAHAH!

try marinating them in viva italian dressing and then rubbing in a little fajita seasoning b/4 slapping them on the grill.

I loved Tony Roma's "southwest" grilled checken breast when they offered it, it might have been grilled then baked though -- cheese and some kind of salsa-type sauce with big chunks of tomato. A tex-mex chicken parmagiano. Served on rice pilaf, tasty!

I concur. He probably means that they put milled corn out there for them to eat, also. They probably did eat it, but you're right.. free range chickens eat a lot of things. :) That's not a bad thing though.. Bugs are healthy. ;)

I've seen it in stores, it's not extremely common, but it is out there. I wasn't too impressed with it on the steak I had at TGI Fridays, you'd think for a $17 steak, it'd be a decent cut of meat :(

While I did use pre-made BBQ sauce, I refuse to use either "PAM" crap or pre-made seasonings...they're either total crap or too salty. :D

I actually do have some 'baking spray', but it's just olive oil...

I found it at Jewel-Osco. :eek: It was something new so I decided to try it out.

It's OK. Not incredible, but not terrible by any means.

Famous Dave's BBQ sauce with the blue label is still one of, if not THE best I've ever had.

Sorry Maul! I was condensending to you because you use bottled BBQ sauce and Pre made Italian dressing so don't get all bent out of shape I offered you generic Ideas ;) :p I saw this on Bobby Flay, found it on their site and made it, it was excellent!

Grilled Jerk Chicken with Mango Cilantro Salsa



(recipe courtesy of Bobby Flay)

1/2 cup vegetable oil
1 onion, coarsely chopped
2 scallion, coarsely chopped
1 large Scotch bonnet pepper, stem and seeds removed
1 tablespoon fresh ginger, grated
3 cloves garlic, coarsely chopped
1 tablespoon finely chopped fresh thyme
2 tablespoons red wine vinegar
1 tablespoon light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
Pinch ground cloves
1 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon fresh lime juice
4 chicken thighs, skin on, bone in
4 drumsticks, skin on
To prepare the jerk chicken:

Puree all the ingredients, except the chicken, in a food processor until almost smooth. Piece the chicken with a fork to make tiny holes. Place the chicken in a large shallow baking dish and rub the marinade into the chicken. Cover and refrigerate for 24 to 48 hours, depending on how intense you want the flavor to be. Preheat grill. Grill chicken on each side for 5 to 6 minutes or until cooked through.

MANGO-CILANTRO RELISH
(recipe courtesy of Bobby Flay)

2 mangoes, peeled and diced
1/4 cup finely chopped red onion
2 tablespoons chopped cilantro
3 tablespoons lime juice
3 tablespoons fresh orange juice

Salt and freshly ground pepper

Combine the mangoes, onion, cilantro, lime juice, and orange juice in a bowl and gently mix. Season to taste with salt and pepper.

Yield: 4 servings
Prep Time: 24 hours
Cook Time: 15 minutes
Difficulty: Easy


Even someone who doesn't make their own BBQ sauce should be able to handle it :D
