I disagree with wikipedia... I tend to agree I consider a condiment something added to a food after its been prepared.

I would say if its an integral part of a recipe it should not be considered a condiment. It should only be considered a condiment if its application is totally unnecessary to the completion of said item. Examples mayo in tuna salad, or deviled eggs, ketchup in meatloaf, or peanut butter and jelly in a sandwich.
I'll give you some of those, but seafood, pizza, and pasta?
