What about Thai and Vietnamese food? It's used pretty extensively in those cuisines.

That's true.

BTW, fish sause is not just used by cantonese people (I am one)... I think viet use it more actually.

it actually is. My co-worker went to a Fish sauce factory in Thailand and you do not want to know what's going on there.
