when you go to a sushi restaurant youre not supposed to tell them how to prepare the food, it is considered rude and disrespectful. so if you dont like a particular restaurant just go get pizza

I can't stand spicy mayo. If only I could find a sushi place around me that has a spicy sauce that isnt mayo based....

thats the way its done at sushi restaurants. at the best ones you dont even choose what you get served, you trust the chef to decide for you

I don't doubt that, but I'm sure that chef is thinking, "OK, gotta get rid of this rancid fish today. With enough spicy sauce on it, they'll never know."

Yup. Spicy sauce is a good way for them to hide the flavor of the fish.

If you're going for sushi, avoid the items with spicy sauce on them. If you really like sushi, it should be for the flavor of the fish, not their spicy sauce.

thats why its an insult, at a good sushi joint they wouldnt do that to you, and if you insist on picking your own dinner its almost like youre accusing them of that

What bothers me is how Asian restaurants don't serve white people spicy food when they ask for it. I (white) ask for spicy and what I get is not spicy. My girlfriend (asian) orders medium or mild and gets something way hotter than I get. Its not fair. This happens at nearly every Asian restaurant we go to. Its annoying.

A buddy of mine goes to a local Thai restaurant and gets it really hot..maybe special order & tell them you want the real hot stuff?

I'm not saying they plan every day to use borderline quality fish, but if you don't think that's ever happened, you don't know the restaurant business.

rarely in the sushi business though. do you know how quickly sushi customers would detect bad fish? any sushi joint that did that would be out of business.

I must agree with OBLAMA. I rarely eat sushi but I often get sashimi and it's usually just the "chef's platter" with whatever is fresh that day. I never pick and choose what I want on the platter because while I know I like to eat it, I sure as hell am no expert when it comes to preparing it.

Also, I've had it enough times that I would know immediately if it was not fresh. I can't imagine a place that serves sashimi would even take a gamble on serving questionable fish.

I digress however, I know this thread is about sushi, and I could imagine someone covering up the taste of old but not necessarily bad fish. Besides, half the sushi rolls out there now contain fully cooked proteins or even none at all.

you guys, sushi chefs consider sushi to be old if it was prepared more than 15 minutes before it was consumed. no reputable sushi chef is going to give you bad fish, esp if its raw
