I need a good casserole recipe

I am thinking about cooking a large casserole on the weekends so I have left-overs to eat during the week when I don't have time to cook.

Maybe a good casserole recipe would fit the bill.

I like to make broccoli cheddar chicken.

Cut up fresh broccoli
Chicken Breast
Velveeta Cubes
Can of cream of chicken
Ritz crackers crumbled

Mix it all up and bake at 400 degress for 45 minutes. Freaking awesome.

You can or you put the rice in with it and bake it. Make sure to cook the rice first. I am not a huge rice fan, so I usually leave it out.

Mexican "lasagna"!
Ingredients:
Ground beef (I usually make it with leftover tamales actually)
Taco seasoning
Corn tortillas
Refried beans (1 can)
Enchilada sauce (1 can)
Corn (1 can)
Sliced jalapenos
Sliced black olives
Block of cheddar, shredded
Sour cream

Square Pyrex baking pan

Brown beef according to taco seasoning recipe & drain fat.

Cover bottom of pan with corn tortillas. Add beef. Cover with some cheese.
Add another layer of corn tortillas. Pour on some enchilada sauce. Spread the beans in this layer. Cover with more cheese.
Add another layer of corn tortillas. Pour on some enchilada sauce. Add the corn. Cover with more cheese.
Add another layer of corn tortillas. Pour on the rest of the enchilada sauce (you basically want to saturate the whole thing with enchilada sauce). Cover with the rest of these cheese and jalapenos and olives.

Bake at 350 until cheese is melty and crunchy on the edges. Slice into sections and serve with sour cream. Ensure the bathroom is available for the rest of the evening. Call your cardiologist and put him on alert. Eat.

Green bean casserole FTW!

-Cans of green beans to suit (we usually do two, but it's a side dish at dinner; you may want six or so)
-One and a half cans of cream of mushroom soup to each can of green beans
-French fried onions, probably one to every two cans of green beans

Put the green beans on the bottom, then cover them with the cream of mushroom soup straight out of the can (no water, etc.), then spread the french onions on top. Bake until the french onions are crispy.

Nope. I do break the chicken up though if it is rather large chicken breast.

Ham & potatoes au gratin-

Take some leftover ham (good stuff, like leftover honey basted spiral cut ham) and fry it for a short time in a cast iron frying pan to carmelize it. Empty the pan, and use it for making a roux, then add half&half or cream (or canned milk) and a good sharp cheddar to make a cheese sauce. Halfway pre-cook some potatoes (I like using buttery new potatoes, but just about anything would work), slice them into 1/2" slices, add to a casserole and mix with sauce. Top with the ham and bake.
