dumb question, best and easiest way to cook them?

Pan frying them is best, and it's ridiculously simple and quick even by post-microwave standards.

I like to cook them by putting them in boiling water, and then serving it up with some stir fried noodle and vegetable

That could work but aren't they somewhat soggy and bland?

You can steam them. Side of soy sauce, sesame seed oil, and red pepper flakes for dipping.

I also like to drop couple into my ramen noodles.

Pan fry.

I love them, but I get sick of the grease/oil sometimes. Like after I eat a plate I'm like ughhh I can't believe I just put that much grease in my body.

You just need to build up your grease tolerance level. Daily diet of two fast food meals a day should suffice.

Got to make sure you don't overcook them, just enough so the meat is cook. Usually I flavor the noodle and vegetable, or make a dipping sauce out of some pepper and soy sauce.

I usually put them in a pan with a half cup of water to steam them up a bit then once the water is evaporated let them get crisp on each side. Beats having them all greasy with oil.

pot stickers do not actually stick to pots

Yes they do. I've made them from scratch. Halfway through the cooking process they are stuck to the pan.......adding stock and then covering causes them to steam and expand and release from the pan. When you take off the lid, they shrivel down to their signature wrinkled look and slide right out of the pan with one nice barely crispy side.

You can cook them dumpling style where you just boil them in water or pot sticker style.

Pot sticker style goes like this:

1) Put oil in the pan, dump your pot stickers in
2) Give it 30 seconds or so and they start turning a little brown.
3) Add water.. maybe half a cup? maybe more?
4) Cover
5) water will start evaporating and then get them a little crisp. don't let them remain oil soaked cuz then its a little soggy. once all the water is gone, wait a little so it does get crispy, dump them out.

vinegar + soy sauce ftw!

Potstickers per say are defined as pan fried. Though some people start them in pan fry then add some water in the pot and cover it to cook the top part.

I prefer to boil dumplings, thus they are not called potstickers.

That's called cheating. Potstickers predates well, pretty much anything in the last few centries. And your PTFE pot will stick eventually.
