You know, they say 90% of computer problems are the user's fault, not the computer. I'm fairly sure this extends into the realm of gas stoves, perhaps you should look into a class on Cooking With Gas down at your local CC Jerby.
I have to agree with most everyone here, gas is the only way to cook. This house was built in the 40s and has this great old range, it has some serious heating power, the only drawback is that 50+ years of cleaning have rubbed off some of the markings, it's a bit of a guessing game on where the setting is for the oven.

But, you couldn't pay me enough to try and boil fudge base on an electric stove again, there is just no damn control.

No, as mentioned before, Watts is a unit for Power, or Units Energy/Units Time. Btus are a unit for Energy, thus, Btu/hr and Watts would be both be in terms of Power. Since 1 Btu ~= 1055 Joules, and 1 hr. = 3600 seconds then, 3000 Btu/hr ~= 3,165,000 Joules/hr ~= 879W Not W/hr
