For those that say 1 for your PSU, don't forget the intake on the bottom if it has one.

No CPU fan, acegazda? Or does it funnel straight to the case exhaust like in Dells?

My assumption is you are referring to *case* fans, so I voted for two. I am using two Scythe 120mm S series 1200rpm fans, one for intake and one for exhaust. If you want total fans, there would be six -- Radeon X1900XTX, 2 case, 2 in the OCZ PowerStream PSU, 1 CPU (Zalman CNPS9500).

1x60mm video card (X1900 fan)
2x80mm PSU (Powerstream fans)

Most of them are pretty low speed, so my system is actually fairly quiet in Windows (although it's a different story in games due to the X1900 blower).

80 mm exaust, intake and side panel, passive nb cooler, stock hsf and vidcard fans. i run at 97% almost 24/7 folding and have never been above 42 c* even when its 90 in my room.
