I had some pizza that was 2 and a half weeks old last week. It was lounging around my room too! Never fear, a one minute microwave and a thirty-second shake gets ALL those little *things* off.

But it doesnt keep the bacteria from releasing their toxins after they have been killed.

Safer? Bacteria can grow on anything.

yes, but whereas cheese will get moldy, pork sausage will grown other bacteria that are more harmful (i.e. e-coli, etc.). everything grows different stuff, and some stuff is worse ( e-coli, salmonella, etc.)

Pepperoni would be realtively safe as well because of the massive amount of preservatives. In fact many stores sell pepperoni outside of the refrigerated case.

The reason pepperoni can be sold without the refrigerated case is because it either has all the oxygen removed from the bag, or they have an oxygen absorber packet in the bag. Just buy a package of beef jerky. There is a small packet of an oxygen absorber to keep bacteria from growing on the jerky.
Oxygen absorber? How does that work?

Step 1.) Absorb oxygen.
Step 2.) Profit?

But really like this

I used to work in the Culinary Arts field, and I can help you answer this question. I will give you a clue to answering your question. If food is left out for more than 2 hours, it is already growing harmful bacteria. Now, you say the pizza was left out for 20 hours. I think you can answer your question now. 😉

Yeah... my mother is a home economist agent for OSU... she used to preach stuff like that to us all the time. She finally got the hint that we didn't care.

Now we leave it sit out (sometimes more than two hours, usually not more than maybe 4-6) and eat it. Chances are slim it'll kill us...

pizza is good basically forever

sure after a few days or so it wil dry out, but just drink something with it

maybe after a week or so you'll get some fuzzies on it, just scrape them off (unless you are a bit sick, then the pencillian will help you, so leave it on)

hmmm I remember reading this exact thread awhile ago.

Deja vu?

Anyways, just ate pizza that was left out 48 hours at room temp and I'm fine.

The reason you think that is because you were professionally trained to prepare food for other people. In that role, you don't want to take any chances that food you prepare might possibly make someone sick. But making a general statement that "food left out for more than 2 hours is already growing harmful bacteria" is just plain stupid. Some foods are better growth mediums than others and there also has to be a source of bacteria that can start growing on it. The fact that the pizza was uncovered makes it more likely that it is fine to eat because it would have dried out somewhat, which makes it harder for bacteria to grow.

Well then, if thats the case, you dont have to believe me. I am telling you this through experience, and what I have learned. That "general statement" is in fact true. But if you want to disregard a fact that has been around for a long time, then go ahead. Not my problem. Just because you dont get sick one time, doesnt mean you wont the next. Putting your health at risk because of you believe pizza is good even if it has been out for a long time is just plain stupid.

Have a nice day.
